How Did Humans Invent Mortar and Pestle?

Scientists have found that a simple bowl and a heavy stick, the mortar and pestle, is the oldest continuously used tool in human history. Dating back at least 32,600 years in ice age Europe, it far predates other ancient innovations like the wheel or the knife in terms of continuous use. Its survival stems from solving a fundamental biological problem: breaking hard materials into soft ones, something the human body cannot do on its own. Evidence from Grata Paglichi in southern Italy, published in 2010, reveals pestle grinders containing starch grains from wild oats that had been heated before grinding.

Around 15,000 to 12,000 years ago, the Nufians of the Levant built the first true mortars, deep cup-shaped stone bowls that made grain processing efficient enough to feed families. These tools were so central that communities carved permanent grinding stations into bedrock, creating shared infrastructure for the group. The physical cost was severe, however: skeletal remains from early agricultural sites show women, who did most grinding, suffered collapsed vertebrae, deformed toes, and arm bones dense as those of elite rowers

The same tool that enabled bread also enabled beer. In 2018, archaeologists announced discoveries at separate sites that rewrote the timeline of both foods.

At Shoua 1 in Jordan, 24 charred fragments were identified as flatbread made from wild grains, dating to roughly14,400 years ago, about 4,000 years before farming was invented. At Rakeet Cave in Israel, starch residues in mortars dating to roughly13,000 years ago showed clear signs of brewing beer, also predating agriculture. The mortar, it seems, made both civilization-defining staples possible—and did so before anyone planted a single seed

Before grinding grain, the mortar was used for art. At Blumbos Cave in South Africa, ochre processing kits date to roughly100,000 years ago, showing early humans were grinding mineral pigments into powder for paint, functionally using the same technology.

It was invented independently over and over again across continents, from California acorn-grinding bedrock mortars to Thai granite curry crushers, because the problem it solves is universal

The tool was also essential to medicine. Cultures from ancient Egypt to India to China used mortars to grind ingredients for remedies, making the mortar and pestle the foundational technology of pharmacology. The Romans embedded grit into ceramic bowls for extra grinding power and wrote poetry about making herbed cheese spreads in one. The word pesto comes from the Latin verb meaning to pound, and mortar comes directly from the Latin mortarium

The mortar and pestle never became obsolete.

Medieval apothecaries used it daily, and between the 17th and 18th centuries it became the universal symbol of pharmacy, a status it still holds today on logos at schools and signs outside shops. Modern industrial tools can chop or blend, but none replicate the precise crushing action that releases the oils and compounds locked inside cells, which is why chefs from Mexico to Ethiopia to India still reach for the same tool their ancestors did. It has survived the agricultural, industrial, and digital revolutions because no machine has ever been built that does the specific job of crushing raw material better than a heavy stick in a stone bowl
